Leek & Chorizo Pizza Recipe

Fresh, in-season Leeks with Sweet & Spicy Chorizo

Leeks, with their subtle sweetness and versatility, have long held a special place in my heart, especially when they’re in the peak of their season. This pizza pays homage to the humble leek, elevating it to star status. Gently sautéed in olive oil, the leeks soften and sweeten. They pair beautifully with the robust, smoky notes of the chorizo.

This dish is a celebration of simplicity and seasonality, proving that sometimes, less truly is more. Focusing on fewer ingredients, allows the true flavours and quality of each component to shine through, creating a pizza that is straightforward yet delicious.

By choosing seasonal ingredients, we get them at their best – and this leek and chorizo pizza is all the proof you need. It’s a simple combination, showing how great ingredients can come together to make something incredible.

Making Your Pizza

Here’s a step-by-step guide to make this Leek & Chorizo pizza.

Preparing the Dough: Begin by carefully hand-stretching your pizza dough on a surface lightly dusted with semolina flour, aiming for a consistent thickness and a slightly raised edge around the circumference.
Mozzarella: Evenly distribute slices of mozzarella over the stretched dough, ensuring a balanced coverage that will melt into a creamy base.
Leeks: Layer the sautéed leek slices on top of the mozzarella. The leeks should have been gently cooked in olive oil until they are tender and slightly caramelized, enriching the pizza with a mellow sweetness.
Chorizo Crumb: Sprinkle the chorizo crumb across the leeks. The chorizo, having been crisped up beforehand, adds a vital punch of smoky spiciness to the mix.
Baking: Transfer your pizza to a preheated oven at 430°C. Cook for 90 seconds, rotating the pizza a quarter turn every 30 seconds to ensure an even bake and a beautifully charred crust.
Finishing Touch: After baking, consider finishing with a drizzle of hot honey. This optional step introduces a complex layer of sweetness and a subtle kick of heat, elevating the overall flavour profile.
