This recipe is simple, quick to make and tastes incredible!

When I was on paternity leave I would bake a loaf of banana bread almost every day. It’s a go to bake and I love how easy it is to mix up flavours, by adding some chocolate or an additional fruit.

This recipe makes a good medium sized loaf for a small family. If you want to make it into a large loaf multiply the ingredients by 1.5.

Ingredients

90g Butter

90g Golden Caster Sugar

2 Medium Eggs

135g Self Raising Flour

1 tsp bicarbonate of soda

1 tsp cinnamon

2 banana

1 tsp Vanilla Extract

Method

Set the oven to 180°C
Melt the butter and then add the sugar and the eggs.
Mix well until the mixture is light and fluffy.
Sieve the flour, bicarbonate of soda & cinnamon on top of the mixture. Gently Fold.
In a separate bowl peel and mash the banana.
Add the banana and the vanilla extract. Gently mix.
Line a small loaf tin with greaseproof paper. Add the mixture and bake in the oven for 30 minutes.
Once baked evenly throughout, remove and leave to cool in the tin. Enjoy 🙂
